Statement ni pendapat daripada seorang teman saya bila saya ajukan persoalan ini :
Fatwa from JAKIM that states that tapai is halal. Tapai to me, is a higher source of sugars for yeast fermentation, and also tastes much more sour than my homemade beet kvass and ginger ale (both non-alcoholic, because: 1, I make sure to cut the beet and ginger into large pieces instead of grinding, because grating/grinding will result in release of more sugars from the beet and ginger, and hence push the process into alcoholic fermentation by yeast instead of lactic acis fermentation by lactobacilli; and 2, I add salt and sometimes some homemade whey containing lactobacilli in order to push it into lact-fermentation).
My understanding is that what is made haram is khamr, defined as anything that intoxicates and causes harm. Hence ecstacy is haram even though it does not contain alcohol. Yeast fermentation, even in bread, produces alcohol, albeit in tiny amounts. From the JAKIM fatwa:
Makanan atau minuman yang mengandungi alkohol secara semulajadi seperti buah-buahan, kekacang atau bijirin serta perahannya, atau alkohol yang terkandung itu terjadi secara sampingan semasa proses pembuatan makanan atau minuman adalah tidak najis dan harus (boleh ) dimakan/diminum.
Makanan atau minuman yang mengandungi bahan perisa atau pewarna yang mengandungi alkohol untuk tujuan penstabilan adalah harus (boleh) digunakan sekiranya alkohol itu bukan dihasilkan dari proses pembuatan arak dan kuantiti alkohol dalam produk akhir itu adalah tidak memabukkan dan kadar alkohol tidak melebihi 0.5%. But of course as in all things, you must follow your heart/conscience. If you feel was-was, then do avoid foods that you feel might not be halal.
On the other hand, LACTO 5 memang ada tanda halal :)
